Cervesa Queso Dip

Ingredients:

  • 2 tbsp butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 jalepeno pepper, minced
  • 2 tbsp all-purpose flour
  • 1 cup Kingsville Brewery Cervesa
  • 1 cup whole milk
  • 2 cups shredded cheese (cheddar, monteray jack)
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 1 tomato, seeded and diced
  • Fresh cilantro
  • Chopped green onion for garnish

Instructions:

  • In a skillet or saucepan, melt butter, add onion, pepper, garlic until softened
  • Add in cumin, chili powder, paprika, salt and pepper, cook 1-2 minutes until fragrant
  • Stir in flour and cook for 1-2 minutes to remove raw flour taste
  • Slowly whisk in beer, and milk, stirring frequently until smooth and slightly thickened
  • Lower heat, add cheese a handful at a time, stirring until melted and creamy
  • Remove from heat, stir in tomato, 
  • Transfer to serving dish and garnish with cilantro and green onions
  • Serve warm with tortilla chips or pretzels or pour over nachos
