Ingredients:
- 2 tbsp butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 jalepeno pepper, minced
- 2 tbsp all-purpose flour
- 1 cup Kingsville Brewery Cervesa
- 1 cup whole milk
- 2 cups shredded cheese (cheddar, monteray jack)
- ½ tsp cumin
- ½ tsp chili powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- 1 tomato, seeded and diced
- Fresh cilantro
- Chopped green onion for garnish
Instructions:
- In a skillet or saucepan, melt butter, add onion, pepper, garlic until softened
- Add in cumin, chili powder, paprika, salt and pepper, cook 1-2 minutes until fragrant
- Stir in flour and cook for 1-2 minutes to remove raw flour taste
- Slowly whisk in beer, and milk, stirring frequently until smooth and slightly thickened
- Lower heat, add cheese a handful at a time, stirring until melted and creamy
- Remove from heat, stir in tomato,
- Transfer to serving dish and garnish with cilantro and green onions
- Serve warm with tortilla chips or pretzels or pour over nachos
